Fish Burgers Stuffed with Cod Liver
Serve the burgers with any side dish or a vegetable salad.
For 4 burgers:
1 lb white fish fillet (cod, pollock, hake, perch) or 1.3 lb if using a whole fish
Half an onion
1 egg
Half teaspoon salt
4 oz canned cod liver
4 tablespoons vegetable oil
2-3 tablespoons bread crumbs
If using a whole fish, separate the flesh from the skin and bones.
Cut the fillet into small pieces.
Place the fish, onion and egg into a blender or food processor. Pulse till finely chopped.
Add the salt and mix well.
Divide the fish mixture into 4 equal parts.
Take one part of the mixture and shape into a patty.
Place one piece of the cod liver in the middle of the patty.
Close the patty around the filling with both hands.
Lightly squeeze the burger with the filling in your hands so that the seam closes completely and the filling is covered on all sides.
You should end up with an even oval burger.
Carefully roll the burger in bread crumbs on all sides.
Repeat the process for the remaining three burgers.
Place a skillet on the stove, pour in the oil.
Slightly flatten each burger and place on the skillet.
Cook for 3-4 minutes on each side.
Fish cooks very quickly overall, and chopped fish gets done even faster, so do not overcook the burgers.
8 minutes of total cooking time is more than enough.
