Cod Burgers
this way you can make burgers from any fish.
For 9 burgers:
1 lb cod fillet
1/3 lb fatty salt pork
1 medium onion
1 egg
2-3 fresh dill and parsley sprigs
1/3 teaspoon salt
3 tablespoons flour for dusting
Vegetable oil for frying
Finely chop the cod fillet, salt pork and onion.
Process the fish, pork and onion in a meat grinder or food processor.
Finely chop the parsley and dill.
Break the egg into the cod mixture.
Add the parsley and dill.
Sprinkle with the salt (1/3 teaspoon).
Mix well with your hands to combine all ingredients.
Divide the mixture into 9 equal parts.
Pour 4-5 tablespoons of the oil into a skillet.
Let the oil heat up for a couple of minutes.
With your hands, shape round burgers.
Roll them in the flour on both sides.
Place the burgers into the skillet.
Cook for 5 minutes on each side.
Serve the burgers with potatoes or rice.
