Pear and Caramel Kompot (Russian Fruit Drink)

1 lb pears
1 cup sugar
3 qt water

The most important are the following 3 things:
Don’t burn the sugar when making caramel
Don’t overcook the pears
Make sure the drink has sufficient time to brew
Let’s get started.
Rinse the pears and slice lengthwise. Cut each pear into 4-8 parts depending on size.
Pour the sugar into a dry pan you’ll be making your drink in and put on the stove.
Stirring the sugar continuously with a spatula, melt it to the light-brown caramel color.
Immediately add the pear slices. Stir just a little bit (the pears will stick to the caramel, so don’t mix too much so that the pear slices remain intact).
Add the cold water and continue cooking.
As soon as the liquid boils take the pan off the stove.
Don’t let the pears boil in the liquid or they would fall apart and the drink will be cloudy.
Let the drink cool off and brew for a few hours; it would be best to let it sit overnight.
Pour into cups and serve.
After brewing the drink will have a beautiful golden color and an intense pear flavor with a hint of the caramel.
