Boiled Potatoes
Boiled potatoes (“varenaya kartoshka” in Russian) are one of the most wide-spread and simple side dishes. It’s very easy to make.
Serves: 4
2.5 lbs potatoes
2 oz butter
1 teaspoon salt
3-4 fresh dill sprigs
Boiled potatoes (“varenaya kartoshka” in Russian) are one of the most wide-spread and simple side dishes.
It’s very easy to make.
Peel the potatoes and cut into large pieces.
Place into a pot. Pour enough water to cover the potatoes by about an inch.
Add the salt.
Bring to a boil and continue cooking for 15-20 minutes.
Checking the potatoes for doneness is easy: pierce one with a knife. If the knife slides in easily, the potatoes are done.
Finely chop the dill sprigs and put aside.
As soon as the potatoes are done, pour the water out.
Do not transfer the potatoes from the pot they cooked in!
Add the butter and the dill.
Cover. Holding the lid tightly, give the pot contents a good shake.
Keep the potatoes covered for a couple of minutes to let the dill aroma permeate the potatoes and allow the butter to melt.
Stir carefully and serve on individual plates.
This is a great side dish for meat, chicken and fish. Also can be served on its own accompanied by a vegetable salad or pickled vegetables.
