Roasted Cauliflower
This recipe is as simple as it is delicious. Another advantage is that there’s no need for pre-boiling the cauliflower: it comes out sufficiently soft yet doesn’t fall apart like the boiled kind.
Serves 4-5
1 head cauliflower (about 2-3 lbs)
8 oz light cream
4-6 oz hard cheese
Half tsp salt
Remove the green outer leaves and separate the cauliflower into medium-sized florets.
Place the florets into a baking dish.
Sprinkle with the salt.
Preheat the oven to 400F and bake the cauliflower for 20 minutes.
Coarsely grate the cheese.
Take the baking dish with the cauliflower out of the oven and stir the florets.
Pour in the cream.
Sprinkle the cheese evenly over the florets.
Return the baking dish to the oven for another 15-20 minutes.
