Fried Potato Circles (Home Fries)

Fried potatoes (or “kartoshka zharenaya” in Russian) are a long-time favorite – as a side dish or even just on their own with pickles or a simple vegetable salad.

4 lbs potatoes
2 oz refined sunflower (or vegetable) oil
1 teaspoon salt

It’s extremely easy to make.

Peel the potatoes and slice into thin circles (one-tenth of an inch).

Place the frying pan on high heat for exactly 2 minutes. Then pour in the oil and continue to heat for another minute.

Pour the prepared potatoes into the pan and cover.

Turn the heat down to medium.

Continue to fry covered for 10 minutes.

Then stir the potatoes in the pan, but take care to turn them over carefully in layers rather than mix and stir.

Using a wide spatula, carefully lift a layer of the potato circles and turn over, first in the center, then along the edges.

After this, cover the pan and continue cooking for another 10 minutes.

Uncover and turn the potatoes over again in careful layers.

Sprinkle with salt.

Cover and cook for 5-8 minutes.

The potatoes are done!
