Chicken on a Jar
The chicken should be crispy on the outside and moist on the inside.
Ingredients:
1 chicken (about 3 lbs)
Half teaspoon salt
2 teaspoons ajika (Georgian spicy sauce made from sweet and hot red peppers with garlic and herbs, similar in appearance and consistency to Italian red pesto, readily available in Russian grocery stores)
Vegetable (sunflower) oil
Preheat the oven to 350F.
Rinse the chicken and blot dry with a paper towel.
Rub the inside with the salt.
Spread with the ajika all over the surface.
Take a medium glass jar and pour about half-full of water.
Place the jar onto a baking sheet.
Prop the chicken onto the jar so that it would stand upright.
Place the baking sheet with the chicken to the preheated oven for 30 minutes.
Carefully take the chicken out and brush all over with the oil.
Return the baking sheet with the chicken into the oven and continue cooking for 30 minutes more.
If your chicken is bigger than 3 lbs it will take longer to cook. In this case you will have to cover the chicken with foil to avoid burning the top.
Take the chicken out of the oven.
Carefully take it off the jar, making sure you don't get burned (the liquid in the jar won't completely evaporate and will be hot).
Serve whole or cut into serving pieces.
