Meat Burgers with Egg
Оven-baked burgers with delicious crispy filling.
For 5-6 burgers:
1 lb ground beef and pork
2 slices white bread
5 eggs
Half teaspoon salt
1 onion
2-3 tablespoons vegetable oil
1 garlic clove, minced
1 tablespoon bread crumbs
Peel the onion and finely chop.
Place on the skillet, add the oil.
Cook for 6-8 minutes stirring periodically.
Hard-boil 4 eggs. Let cool, peel and chop into small cubes.
Place the eggs and the onion into a bowl.
Add the bread crumbs and the garlic clove.
Mix well. The stuffing for the burgers is ready.
Place the bread slices in the cold water and set aside for 5 minutes.
Drain the water, squeeze the bread dry. Place into a food processor and chop.
Place the beef and pork into a bowl.
Add the remaining raw egg.
Add the chopped bread.
Sprinkle with the salt.
Mix well to combine all ingredients.
Now it’s time to pound the meat mixture – this is necessary for the burgers to hold their shape better.
Grab the meat mixture with your hand, lift it from the bowl and throw back into the bowl with force. Repeat 10-15 times.
Notice how the texture of the meat mixture changes after that – it will become much more uniform.
Moisten your hands and divide the meat mixture into 5-6 equal parts.
Place each part of the meat into your hands and shape into a patty.
Place a heaping tablespoon of the filling in the middle of the meat patty.
Put the edges of the patty together with both hands, making them overlap a bit. Pat the burger a little in your hands.
Transfer the burgers onto an oiled baking sheet (you can use parchment paper to line the sheet instead). Be sure to place the burgers seam-side down! (The seam is the area where the edges of the burger were joined together).
Cook the burgers in a preheated oven (400F) for 15 minutes.
Serve with any side dish or vegetable salad.
